You could try sugar instead of salt but not sure how that would go with beets

Beetroot is big in Australia. It's everywhere and I hate it XD

It's also very sweet from cans so I think it's typically pickled with sugar here

The Supermarket stuff is all too sweet for me, we'd been experimenting with lower and lower sugar amounts and different spicing. The last one we did with no sugar and that batch was REALLY harsh even by my tastes. Needs a little bit of sweetening to take the edge off but not much.
